I know I can take the time to do it letter by letter, but then she's going to want another one, and another one, and...
Does anybody know of a program to do this kind of thing?

You could type up the words in MS word or similar software and copy each word into a vector graphic software like inkscape or Corel and arrange the vectors as desired

I'd use Inkscape.
Pick a suitable font. Adjust the kerning. "Kerning" is a term for the space between letters. In this case, you want adjacent letters to touch, or even to overlap. I didn't experiment with the line spacing; I just typed each line separately and then moved them so they overlapped.
Then convert the object to a Path, (or is it Stroke to Path?). At this point, turn off the Fill (red circle) and turn on the Stroke (green circle) so you can see the outlines of the letters.
Do a Path->Combine, and then Path->Union. Lather, Rinse, Repeat
Export to your favorite laser format.

I design in Corel, and I have a similar thing for letter spacing, but I was hoping for a nice program / plug in of some sort. And i know she's going to want more of this kind of thing. I see a lot of letter nudging in my near future.

Umm, okay. I didn't have to "nudge" any individual letters. I just highlighted all the text and reduced the spacing until the letters overlapped a little. lightburn has an automatic merge feature for text... so basically you just have to set the letter spacing to 0 or less.
